Bones, well, I would concern about how 'stable' the bone was, and whether or not the dog could choke on parts once broken off.

Hate to talk so simply, but stable basically means hardy, and not likely to easily shed bits of bone a dog could swallow.

In my case dog is suppose to be eating the raw bones. You want dog to be able to easily break them up so that they do not splinter i.e dont want it being hard! You want them to be big enough pieces that dog cant swallow the bones whole (choking hazard). You want the dog to have a real good chew and crunch session before swallowing.
You are probably thinking of recreational bones which should be chewed and not broken up, however you dont want them to be too tough otherwise dog can smash their teeth up on them.
